Roasted Chicken with Rice and Lemon sauce

Ingredients:

Sauce making:

  • 1 tsp. Allspice
  • 1 tbsp soft Butter
  • 2-3 tbsp Flour
  • 1 Lemon – squeezed
  • 1-2 cups of Chicken Broth
  • 1 or 2 pieces of Chicken for broth
  • ¼ tsp Salt

Method:

  1. Wash whole Chicken (or cut in pieces). Place in a baking dish. Add spices, and 2 tbsps. Shortening
  2. Bake at 350 degrees for 1 hour and a half or till tender.
  3. Wash and drain rice, then place in a bowl with hot tapped water for about 10 mins.
  4. In a medium sized pot fry Egg Noodles with 2 tbsps. Shortening till light brown, then add the Rice and saute for a few seconds. Pour in boiling water enough to cover the Rice, add a teaspoon Salt (or according to taste) and let boil, then set at low heat and let cook till all water is almost drained, and set aside – not to worry if covered it will cook nicely on it’s own. Or keep on simmer till Rice is fluffy and cooked.

Broth:

  1. Boil the two Chicken portions in cold Water. Boil it well making sure all froth (or foam) is removed. Add salt for taste.
  2. When chicken is cooked set broth aside for use in sauce. You can add these pieces to the pan in the oven or remove bones and cut them up and place in sauce after you finished thickening it.

Sauce:

  1. Take a small saucepan, add melted Butter, pour Flour stirring constantly, add hot Chicken broth and continue stirring.
  2. Place on stove on med-high so sauce will thicken, adding more liquid if necessary to keep sauce at a medium thickness.
  3. Once complete add Lemon juice, and Salt according to taste.

Enjoy this full course meal with a side dish of tomato and cucumber salad.

Alternative addition to full course meal: Homemade Chicken Soup

When a whole Chicken is used, a delicious homemade Soup could be made out of Back/Wing parts of the Chicken. Include some Noodles and a sprinkle of fresh parsley, a couple of Potato pieces, Celery leaves, and Carrot chunks.

Now you have yourself a two course meal – and the Rice and Lemon Sauce meal. Enjoy!!
