Method as per Miss Gouder
Ingredients:
- 1 lb. Flour
- ½ lb. Margarine
- ¼ oz. Salt (2 leveled tsp.)
- ¼ pt. Cold water
Method:
- Sieve the Flour and Salt together.
- Add the Margarine cut up into lumps. Cover the Margarine with Flour before beginning to rub in.
- Rub in until no lumps of Margarine are left, incorporating as much air as possible while rubbing in.
- Mix with a round-ended knife till large lumps are formed.
- Draw together with the fingertips.
- Knead on a light floured board till the dough is smooth, using fingertips only.
- Form into the shapes required when finished.
- Roll out, turning the pastry round so as to maintain the shape.
Some uses of short pastry:
Pies / Pastries / Tarts / Apple Dumplings or simply fry small pieces in oil and remove and place in a plate of sugar and eat while warm.
