Short Pastry

Method as per Miss Gouder

Ingredients:

  • 1 lb. Flour
  • ½ lb. Margarine
  • ¼ oz. Salt (2 leveled tsp.)
  • ¼ pt. Cold water

Method:

  1. Sieve the Flour and Salt together.
  2. Add the Margarine cut up into lumps. Cover the Margarine with Flour before beginning to rub in.
  3. Rub in until no lumps of Margarine are left, incorporating as much air as possible while rubbing in.
  4. Mix with a round-ended knife till large lumps are formed.
  5. Draw together with the fingertips.
  6. Knead on a light floured board till the dough is smooth, using fingertips only.
  7. Form into the shapes required when finished.
  8. Roll out, turning the pastry round so as to maintain the shape.

Some uses of short pastry:

Pies / Pastries / Tarts / Apple Dumplings or simply fry small pieces in oil and remove and place in a plate of sugar and eat while warm.
