Chicken Noodle Homemade Soup

Method as per Saada Dahdah

Ingredients:

  • 2 pieces of Chicken preferably the back parts and wings
  • ½ cup of Egg Noodles
  • 1 tbsp. Parsley (chopped fresh or dry)
  • 1 tsp Salt
  • 1 small Onion

Method:

  1. Wash and pat dry Chicken pieces, and cut into pieces.
  2. Boil Chicken in a large pot, adding Salt and full Onion to absorb froth.
  3. Remove Froth and from the top, and place in a bowl (then discard it) before it overflows.

  4. Once Chicken is soft and soup changes colour the soup is cooked. Add Noodles and Parsley for taste.
  5. Let boil BUT lower down heat to moderate, as Noodles taste soft, put off the stove as its ready to serve.

You can add any vegetables to this soup before adding the Noodles and Parsley – vegetables like chunks of Potatoes and Carrots, a stick of Celery or just the leafy part.
