Egg ‘Fricasse`

Method as of Miss Gouder

Ingredients:

  • 6 Hard boiled Eggs – cut in small squares
  • 1 can of Peas
  • 1 Onion
  • 2 tbsp Tomato Paste or 1 can of Stewed Tomato
  • Seasoning of your preference
  • 1 tsp Salt
  • 1 tsp Pepper or Curry powder
  • Pinch of Sugar
  • ½ cup of Water

Method:

  1. Cut Onion in very thin slices and fry them.
  2. Add the Tomato paste (or tomatoes), the seasonings or curry, and a pinch of sugar
  3. Simmer for 10 mins
  4. Add the water and simmer for 20 mins
  5. Add the Peas 10 minutes before serving
  6. Add the hard boiled Eggs.
  7. Stir lightly and it’s complete.

Enjoy this meal with bread and rashers of Bacon or simply by itself.
