Oven baked Cod or Salmon

Ingredients:

  • 2 lbs. fish – Salmon or Cod
  • 2 medium size Onions (sliced rings)
  • 4 medium size Potatoes (quartered cut) optional
  • 2 cloves of Garlic (chopped small)
  • 1 Lemon squeezed
  • 4 Black Olives (chopped)
  • 1 tsp. Caper’s
  • 1/2 cup of water
  • 3 tbsp. Oil
  • Salt and Pepper
  • ½ tsp of Fennel seeds.
  • Dash of Mint

Method:

  1. Wash Fish pieces drain and pat dry. Cut into medium sized pieces. Sprinkle with Salt and Lemon juice. Let stand overnight or a few hours before cooking.
  2. In a glass or metal baking pan, add Oil, place drained fish, sliced Onions, Potatoes, Olives, Capers, pour lemon and water, and include spices.
  3. Bake at 350 degrees, till Fish and Potatoes are cooked, at least 45mins

You can replace Potatoes to a side dish of boiled rice.

Enjoy this meal with a side dish of green or Cucumber salad.
