Ingredients:
- 2 lbs. fish – Salmon or Cod
- 2 medium size Onions (sliced rings)
- 4 medium size Potatoes (quartered cut) optional
- 2 cloves of Garlic (chopped small)
- 1 Lemon squeezed
- 4 Black Olives (chopped)
- 1 tsp. Caper’s
- 1/2 cup of water
- 3 tbsp. Oil
- Salt and Pepper
- ½ tsp of Fennel seeds.
- Dash of Mint
Method:
- Wash Fish pieces drain and pat dry. Cut into medium sized pieces. Sprinkle with Salt and Lemon juice. Let stand overnight or a few hours before cooking.
- In a glass or metal baking pan, add Oil, place drained fish, sliced Onions, Potatoes, Olives, Capers, pour lemon and water, and include spices.
- Bake at 350 degrees, till Fish and Potatoes are cooked, at least 45mins
You can replace Potatoes to a side dish of boiled rice.
Enjoy this meal with a side dish of green or Cucumber salad.
