Method as per Sada Dahdah
Ingredients:
- 3 bunches of (foot) Long Green Beans — Loubieh
- 3 large Onions
- 4 large cloves of Garlic
- 1/4 cup of Olive Oil
- 8 large ripe fresh Tomatoes or 2 cans stewed (diced) Tomatoes.
- 1/2 tsp. Salt
- 1/2 tsp. Allspice
- 1/2 tsp. Cumin
- 1/2 tsp. Black Pepper
Preparation:
- Cut Loubieh into 1.1/2″ size, wash and dry, and put aside
- Chop and fry, Onion and Garlic, in Olive Oil.
- Drop in the Loubieh and fry till all beans are soaked well in the mixture.
- **if using fresh Tomatoes cut in chunks and drop in mixture, adding a cup of water**
- **if using canned tomatoes then pour in the 2 cans only**
- Add the spices. Mix well, and cook on medium heat till beans are soft and eatable.
Enjoy this meal hot or cold, with hot Pickles, maybe some fried Potatoes, and of course Arabic Pita bread.
