Foul Mudammas | Fava Beans Dip   

Method as per Saada Dahdah

Ingredients:

  • 1 can of brown Fava beans
  • 2 – 3 cloves of Garlic
  • 1 stem of green Onion
  • ½ banana hot Pepper
  • 1 Lemon or 2 according to taste
  • ¼ tsp. Salt
  • 1 tbsp. Fresh or dry Parsley

Method:

  1. Pour Fava beans (liquid included) in a small pot, and heat for 10 minutes on medium heat.
  2. Chop finely the Garlic, Onion, and hot Pepper and set aside.
  3. Squeeze Lemon and put aside.
  4. Once beans are soft and liquid almost dry, remove and set-aside for a couple of minutes to cool down.
  5. As is, in the pot, mash up all beans (like mashed potatoes). Gather all ingredients and pour over beans and mix well.
  6. Foul is now ready to eat.
  7. Place in bowls or flat plates and pour over some Olive Oil, covering the top. To garnish, sprinkle some chopped Parsley.
