Roasted baked Potatoes- Maltese Style

Ingredients:

  • 8 medium size Potatoes
  • 3 medium size Carrots
  • 1-2 medium sized Onions
  • 1 leveled tsp Salt
  • 1/2 tsp. Pepper to taste
  • 1/2 tsp.  Fennel seeds
  • 2 tbsp Vegetable Oil
  • ½ cup of Water

Method:

  1. Peel and slice the Potatoes, Onions and Carrots, (or cut into desired shape).
  2. In a baking dish spread Potatoes, Onions, and Carrots, then add the Oil, Spices, and water.
  3. Bake at 350 or 400 degrees till vegetables are done, turning them once or twice.
  4. Broil to get a toasty colour
