‘Imsahan’ – Hot Spicy Chicken in a Sandwich

Ingredients:

  • 6 thick Arabic or Greek Pita Bread
  • (2 or 1 loaf for each chicken sandwich use whole or split)
  • 3 pcs or more whole boneless Chicken pieces
  • 3 lbs or 8 medium Onions
  • 2 banana hot Peppers (or 2tblsp hot Chili Pepper)
  • ½ cup Olive Oil
  • 3 tbsp Sumac
  • 1 level tbsp. Salt
  • 1 level tbsp. Allspice
  • ½ cup Pine Nuts
  • Add chunks of 3 Potatoes – optional

Method:

  1. Cut portions of Chickens and place in large baking tray.
  2. Sprinkle with 1 tbsp. Sumac; Salt; ½ tbsp Hot Pepper; Allspice; and ¼ cup Oil. Slit tops for better baking.
  3. “Optional Potatoes for anyone who prefers without the Bread”
  4. Wash and peel Potatoes and cut in chunks or circles and bake with Chicken.
  5. Bake at 400 degrees till Chicken is cooked.

Prepare the Onions:

  1. Peel and wash Onions and cut in half and slice them.  Place Onions in a large bowl. 
  2. Wash hot Peppers and cut in small pieces and drop in with the Onions. 
  3. Pour in oil, Pine Nuts and spices to the Onions and mix well.
  4. Fry in saucepan till Onion and Nuts are roasted, set aside.

To make a Sandwich Meal:

  1. Take the Pita Bread – slit open fully and dip one side in sauce from the Chicken tray. You place it in another tray.
  2. Place a piece of Chicken, some of the Onion mixture on top to cover, and then take another dipped loaf of Bread to cover.  ** Do this with all the loaves of Bread according to how many persons or how many will be eaten per person **
  3. Press together and put in the oven for a few minutes to toast.

Suggestion:

DO NOT EAT THIS SANDWICH BY HAND – USE FORK AND KNIFE, as hot juices might pour off the edges.

Other option for Bread – use the Greek loaves – as they are soft and easy to dip in the sauce. In this case use two loaves per sandwich.
